Maria’s favorite Ecuadorian foods are hornado and ceviche. The U.S. equivalent to the hornado is the carnita but it is served with llapingachos, mote and maduro, also known as potato cakes, hominy and sweet plantains.

In her free time, you can find Maria taking a Zumba class. She also loves getting away with her husband Chris when they can find a trail to hike – even better if it’s up in the mountains.
